How to make pickled pepper braised pig's trotters

1.12 First, select the pig's front trotters, burn off the hair with fire, then soak them in clean water and scrape them clean, and finally chop them into pieces.

3. Take out the pig's trotters and wash away the blood with hot water.

4. Chop the pickled ginger and pickled pepper, and prepare green onion knots, old ginger, aniseed, galangal, and bay leaves.

5.1 Then pour in pig’s trotters and green onion knots.

6.2 Pour rapeseed oil into a hot pan, add peppercorns, old ginger, garlic, pickled ginger, pickled peppers, sugar, spices, and Pixian bean paste when the oil is hot, and stir-fry over low heat until the oil turns red.

7. Stir-fry evenly, add two spoons of white wine and one spoon of pepper powder and stir-fry over high heat until fragrant.

8. Add boiling water to cover the pig's trotters and bring to a boil over high heat.

9. After boiling, pour into a casserole and simmer over low heat.

10. Simmer on low heat for about two hours.

11. Take out the pig's trotters and put them into a small casserole and filter the soup. (The small casserole should be scalded with boiling water in advance)

12. Sprinkle with chopped green onions, and you can start eating a bowl of fragrant, spicy, soft and melt-in-your-mouth pig's trotters!
