1. One grapefruit.

2. Use a knife to cut the pomelo peel several times from top to bottom, and use a wooden spatula or spoon to help peel it. Let the strong man in your family do this, as it is very difficult to peel.

3. Peel off the outer yellow-green skin of the pomelo peel.

4. Cut the white part into thin slices.

5. Boil water in a pot and cook the cut pomelo peel for two or three minutes.

6. After taking out, soak it in cold water, squeeze out the water, and soak it again. Repeat this several times to remove the bitterness and leave only the fragrance.

7. Take the pork belly out of the refrigerator, thaw it, wash it clean, and remove all the hair on the skin.

8. It is best to cut it before it is completely thawed, and cut it into thin slices.

9. Put the rice into the wok and fry until the rice grains turn light yellow.

10. Use a food processor to grind the rice into flour. Don’t grind it too finely. It’s best to have coarse grains as they taste better.

11. Add red fermented bean curd, bean paste, cooking wine, beef sauce (click here for specific instructions), pepper powder and five-spice powder to the chopped meat and marinate for 20 minutes.

12. Add the ground rice flour to the meat after marinating for 20 minutes.

13. After lightly mixing the rice flour and meat, add the grapefruit peel that has been squeezed dry.

14. Add some more rice flour and mix thoroughly.

15. Put the softened rice dumplings leaves in the steamer, put the mixed meat in and steam for 40 minutes.
