1. Wash the ribs, drain and cut into 6-7cm long pieces. Beat the eggs.

7. Heat the wok and add 300 grams of oil until it is 60% hot (actually use about 100 grams)

8. Turn the heat down to medium-low, add the ribs (add them in batches so you can use less oil) and fry them in the pan for a few times. When the skin is tight, take them out. Fry all the ribs.

9. Pour the ribs that have been rolled in the oil pan and have their skins tightened back into the oil pan. You can pour all of them in at this time. Keep rolling until the surface is golden brown and then take them out.

10. Use a large bowl, evenly drop the fried ribs into the bowl, and place the taro on top.

11. Cover the taro ribs with tin foil, put them into the pressure cooker and steam them for 20-30 minutes on low heat.

12. Place the steamed taro ribs upside down on a plate, sprinkle with chopped green onions and you can eat it.
