Malatang is a Sichuan-style food that is now popular in all parts of the country and is deeply loved by people. Especially female friends, they have to eat it almost every few days, otherwise they will feel like something is missing. With the continuous improvement of production and processing technology, there are more and more flavors of Malatang and the raw materials are becoming more and more abundant. But there are also many people who like the traditional old-fashioned spicy hot pot. So what is the method of making the old-fashioned spicy hot pot?

1. Place a wok on the fire, heat the vegetable oil, add the pickled ginger slices, pickled chili segments, bean paste, and old ginger (smashed) and fry for a few times, drain off the remaining oil, add lard, garlic cloves, peppercorns, etc. and fry for a few more times, pour in the chicken or duck soup and cook for about 10 minutes, add sugar, salt, MSG, pepper powder, bring to a boil, skim off the foam, and that's it. This soup can also be used as a base for hot pot.

2. Add an appropriate amount of rapeseed oil, heat the oil to 60%, add sugar and stir-fry until it becomes a flowing lake. When the oil temperature rises to 90%, add the tender chicken legs and wait until the color becomes bright red and slightly darker. Add broth and cook for a while. Add butter, lard, chicken bones, lamb bones, buffalo meat, Sichuan pepper, star anise, cinnamon, cold ginger, meat knot, bay leaves, cardamom, a little soy sauce and simmer over low heat. In another pot, add vegetable oil, stir-fry the bean paste until fragrant, add minced ginger; wait until the meat is tender and the soup is colored, remove the odor three times, and the soup is ready.

3. After the bottom of the pot is ready, you can add vegetables. Add the washed vegetables, lamb rolls, fish balls, chicken balls, etc. into the pot and cook. At this time, you have to control the heat yourself. You can add meat that can be cooked longer until half cooked, and then add vegetables. Vegetables are easier to cook.

Place cooked vegetables in a large bowl. Add salt (the amount of salt depends on the amount of food) and water to sesame paste to make a paste. Soak minced garlic in a little water for about half an hour in advance to make garlic water. Then pour the prepared sesame paste and garlic water on the food and mix well. You can put a little spicy hot pot soup in the food.

The need for healthy eating. Some diners' stomachs are allergic to spicy food, so you can add less chili.
