1. Weigh the basic materials and set them aside. I made 70% dark chocolate. The ratio is as follows: cocoa butter and cocoa powder 70% in total (cocoa butter is 1.5-2.5 times the cocoa powder), and the remaining 30% can be divided according to taste. I'm half and half. (Unrefined cocoa butter, Baileys cocoa powder, Purple Windmill whipping cream, Taikoo powdered sugar)

2. Prepare the tools, a pot for heating and a bowl that can be placed in the pot. Mixing cup (preferably with a pointed mouth), silicone mold

3. Mix cocoa butter, cocoa powder and powdered sugar. Heat in hot water at about 60 degrees and stir constantly. I was lazy and didn't crush the cocoa butter. It would be easier to mix if I crushed it.

4. Stir until the state shown in the picture

5. Add whipped cream. This step is very important. The melted chocolate solution will become smoother as it is stirred. The stability will be higher, but I don't know the specific principle.

6. Stir again until it reaches the state shown in the picture (a little thicker than before) and stir thoroughly. Remove from heat and add some rum or chopped nuts

7. Place the gingerbread man and duck on a flat plate
