1. Three Cups of Squid

Material

2 squids, 3 minced garlic cloves, some chili pepper, about 6 slices of ginger, 1 stalk of chopped green onion, 1 tablespoon of sesame oil, 1 tablespoon of soy sauce, half a tablespoon of sugar, about 10c rice wine

2: After heating the oil pan, pour in appropriate amount of sesame oil. First, throw the ginger slices, the top sections of green onions, minced garlic and chili peppers into the pot and sauté until fragrant. If there is shredded meat at this time, you can also throw it in and stir-fry together.

3: Then put all the sliced ​​squid into the pan and stir-fry.

4: If you only have soy sauce at home, you can add a little more sugar. But if you only have oyster sauce at home, since oyster sauce itself is a bit sweet, you can reduce the amount of sugar later!!

5: Please pour in about half a bowl of boiled water.

6: Now you can add sugar!! Then stir-fry evenly.

7: Cover the pot and simmer until the flavor is absorbed.

8: Next, I throw in the scallion tails just before the pot is ready to serve, so that the scallion tails won’t turn black and rotten!

9: Then pour some rice wine

10: Please keep the heat low to prevent the pot from burning and drying out. Wait for the soup to dry up a bit.

11: Finally, before serving, throw in the basil and stir-fry.

2. Braised Pork Rice

Material

200g pork belly, some scallions, ginger and garlic, half an onion, 3g salt, 2 mushrooms, 2 spoons soy sauce, 2 spoons dark soy sauce, 1g star anise, 5 crystal sugars, 1 egg

1: 200g pork belly, clean and dice

2: Cut into cubes about 1cm square

3: Wash and dice the mushrooms

4: Cut the onion into strips and prepare the fried onion crisps

5: Cut the onion into strips, pour a proper amount of oil into the pan, wait until the oil temperature rises, pour in the onion and fry until golden. Use high heat for about 30 seconds, then turn to low heat for 3-5 minutes. Remove from the heat and place on oil-absorbing paper. Let it cool naturally and it will become crispy. Cut into small pieces for later use.

6: Leave a small amount of oil, put in the pork belly when the oil is hot, and stir-fry the fat in the meat.

7: Add mushrooms, onions, ginger and garlic and stir-fry together.

8: Pour in dark soy sauce, soy sauce and salt

9: Add the fried scallion oil at the end of the stir-fry, stir a few times, and add enough boiling water (do not use cold water, it will irritate the pork belly and make it hard to chew). Add enough water at one time, try not to add water in the middle, and if you add water, use boiling water.

10: Add a few pieces of rock sugar and simmer over low heat until the sauce thickens.

11: Prepare a boiled egg, peel it and put it in the soup to cook together (I didn’t take a photo). When the soup is almost dry, you can turn off the heat. Wash the rapeseed and blanch it in boiling water. Pour the braised meat and soup + half a braised egg on the rice. Done.

3. Appetizers

Material

Main ingredients: 1 chicken breast, 1 carrot, 1 cucumber, 1 small plate of raw peanuts, 1 ham sausage. Accessories: dry starch, chopped green onion, shredded ginger, 1 egg, soy sauce, dried chili pepper

1. Dice the chicken breast, add dry starch, water, a little salt and light soy sauce, stir and marinate.

2. Peel and dice the carrots and cucumber, and slice the ham.

3. Pour more oil into the pot, heat the oil to 50%, pour in the peanuts and stir-fry over low heat until cooked.

4. Pour in carrots and cook until golden brown.

5. Turn up the heat, beat an egg into the marinated chicken, mix well and put into the pot. It is best to use chopsticks to break them up so that they will not stick together when fried. Remove from the pan when cooked.

6. Add dried chili peppers to the pot and stir-fry until fragrant. Add chopped green onions and shredded ginger, stir-fry diced carrots, diced chicken, and diced cucumber. Add salt, light soy sauce, and peanuts before serving (the ham can be fried)
