How to make delicious carp head

Carp is a kind of freshwater fish that we often eat. There are many ways to cook carp. If the carp is relatively large, you can cook the carp head separately. The fish head tastes very good and has good nutritional value. You can make carp head soup or carp head stewed with tofu, which are both good methods. When cooking carp head, you should also marinate and fry it to fully bring out the flavor of the fish.

How to make delicious carp head

1. Wash the fish head and blanch it in boiling water for 1 to 2 minutes. 2. Take out the fish head and shake off the water. 3. Pour oil into the pot. After the oil is boiled, sprinkle a little salt on the fish head (add salt to prevent the oil from splashing on you). Put it into the oil pan, cover it and fry until golden brown. 4. Leave a little oil in the bottom of the pot, add water, put in the fish head and add a few pieces of tofu that have been blanched in water. 5. Soy sauce, salt, chicken essence, pepper, cooking wine, red pepper, aniseed, chopped green onion, ginger slices (ginger slices to remove fishy smell). 6. After putting everything in, cover the pot and simmer for half an hour. Add water and boil for 10 minutes. It tastes very good (until the soup is proportional to the tofu and fish head).

Method 2

Ingredients: 1100g carp (fish head) 1 piece of tofu Seasoning: salad oil, salt, soy sauce, vinegar, 1 scallion, 5 slices of ginger, 2 star anise, 2 dried chilies, 1 tbsp cooking wine, 1 tbsp sugar

1. Remove the gills and scales of the fish and clean it. 1. Use kitchen paper to wipe the moisture off the fish body 2. Heat the pan and take a piece of ginger and wipe it around the pan 3. Pour oil into the pan and turn the pan back and forth to make sure all sides of the pan are covered with oil. Heat the oil and put the fish head in. When the fish skin turns golden brown, turn it over and fry the other side.

5. When both sides are fried until golden brown, add ginger slices, star anise and dried chili peppers. 6. After the seasonings become fragrant, add 1 tablespoon of vinegar and cook. (At this time, the whole house is filled with the aroma of vinegar) 7. Add 1 large bowl of water. Add chopped green onion, sugar, cooking wine and soy sauce and bring to a boil over high heat. Cover and simmer over low heat for 20 minutes. 8. After 20 minutes, cut the tofu into small pieces and put it into the pot. Add salt to taste and simmer for about 15 minutes.

Cooking Tips

1. When frying fish, do not turn it over immediately after putting it into the pan. Turn the fish over when the skin is golden brown. 2. The purpose of cooking vinegar is to remove the fishy smell and enhance the flavor. There is no need to worry about adding more vinegar at this time, because it still needs to be stewed, so there is no need to worry about the sour taste after it is out of the pot.
