How to cook chestnut-roasted lamb

1. Material map. The chestnuts are peeled in advance, the method is in the tips.

2. Cut the mutton into pieces and blanch it with green onion and ginger.

3. Cut the green onion into sections and slice the ginger, and prepare star anise and bay leaves.

4. Water-based seasonings include one spoonful of dark soy sauce, two spoonfuls of light soy sauce, and one spoonful of cooking wine. Solid seasonings include one spoonful of sugar and appropriate amount of salt.

5. Wash off the foam from the blanched mutton.

6. Put the blanched mutton into the pot together with the onion, ginger, spices and seasonings and mix well. Depending on the pot, add appropriate amount of water or broth.

7. Bring to a boil over high heat, then turn to low heat and cook until done.

8. Open the lid and stir the meat in the middle, cooking for about 30 minutes or longer until the meat is tender.

9. Serve immediately after boiling.
