Spicy beef vermicelli soup recipe

1. After cleaning the beef, put it into the pot together with the scallion (1 section) and garlic cloves, pour in enough water to cover the beef, bring to a boil over high heat, skim off the foam, cover with a lid and cook over low heat for 1 hour

Tear the beef into matchstick-thick strips, cut the scallion (1 section) diagonally into 2cm wide sections, cut the cooked bracken into 4cm long sections, pinch off the tails of the mung bean sprouts, and cut the vermicelli into 20cm long strips for later use.

4.12 Put the shredded beef, blanched bracken and bean sprouts into a bowl, add 2 teaspoons (10ml) of soy sauce, white pepper powder, sesame oil (5ml), minced ginger and minced garlic and mix well.
