How to make Hebei braised noodles

1. Cut the beans into 2 cm long pieces, cut the green onions into oblique strips, and mince the garlic. The noodles must be rolled by hand. I think it is better to add more beans because they will shrink in the end.

2. Heat the pan over low heat, put your hand 10 cm away from the pan to feel the heat, then add oil, chopped green onion, thirteen spices and soy sauce.

3. Add beans, stir-fry and add appropriate amount of salt.

4. Add a small bowl of water.

5. After stir-frying evenly, serve three-quarters of the beans and, of course, three-quarters of the soup as well.

6. Cut the noodles into three sections to avoid any single piece being too long.

7. Spread the beans remaining in the pot flat, then sprinkle a quarter of the noodles and spread evenly.

8. Sprinkle a quarter of the beans and soup on the noodles, making sure to spread them evenly.

9. Repeat steps 8 and 9 to spread the noodles and beans layer by layer.

10. After spreading, pour oil along the edge of the pot. The more oil you have, the more crispy and fragrant the food will be, and it won’t stick to the pot.

11. Sprinkle half a bowl of water evenly on the surface.

12. Cover the pot and simmer on medium heat for 4 minutes. If the time is too long, the bottom of the pot will become burnt, and if the time is too short, the simmering effect cannot be achieved.

13. Open the lid of the pot and use chopsticks to stir the beans and noodles in the pot. Then cover the pot again, cook on medium heat for one minute, then open the lid and stir well. Repeat this process. The more times you do this, the more charred the noodles will be and the more delicious they will be.

14.Finally, add the minced garlic and mix well.

15. It’s out of the pot! It smells good, tastes good, and the aftertaste is even better, especially when you eat the charred noodles, ah, it's so delicious...!
