How to make Cui Yi tea

1. Cut the watermelon rind into large pieces and wash it clean. Then use a watermelon rind knife to scrape off the outermost green skin of the watermelon rind (the remaining watermelon rind can be removed from the red flesh and cut into small strips and marinated with salt to make a small mixed vegetable that is delicious when eaten with rice)

2. Put about 1 kg of water in the pot and add about 200 grams of watermelon rind.

3. Add rock sugar (a little sweetness is fine, but not necessary), bring to a boil over high heat, simmer for 3-5 minutes over low heat, then turn off the heat and simmer for a while. You can let it cool, remove the rind, pour it into a large bottle and chill it for a better taste; you can also put it in a cup, put a piece of rock sugar in it, pour in boiling water, cover it with a lid and simmer for a while before drinking
