How to prepare the meat filling for Xiaolongbao?

Ingredients: 300 grams of pork (fat to lean ratio of about 3:7). 60 grams of light soy sauce, a little chopped green onion and ginger, and appropriate amounts of sugar, salt, MSG, and sesame oil.

Method: 1. Wash the pork, chop it into stuffing, put it into a bowl, add 180 grams of water in 3 times, and stir in one direction until it becomes viscous.

2. Add soy sauce, chopped green onion, chopped ginger, sugar, salt and MSG into the mixed meat filling in turn, and stir thoroughly to make the meat filling absorb the flavor.

3.Finally, add sesame oil and mix well. Note: During the preparation of the meat filling, always stir in the same direction. Avoid stirring without direction, which will make the meat filling very loose and have a bad taste. The amount of water added can be increased to 240 grams, but it must be stirred until it becomes viscous, otherwise the filling will slowly seep out water and affect the taste of the filling.

Brush the steamer with oil, put the vegetable leaves on it, and then brush the oil on the vegetable leaves. Put the dumplings in and steam them for seven to eight minutes. Mix well with the sauce and serve on the table. Eat while hot.
