How to make fresh mushroom fish balls

1.1 Make a cut at the head and tail of the fish, go deep into the fish bones but do not cut through them, then remove the fish meat along the bones.

2.2 Clean the fish.

3.1 Slice the fish into 2 pieces horizontally.

4.2 Remove the fish meat and discard the fish skin.

5.1 Wash and chop the mushrooms.

6.2 Cut into small pieces the size of soybeans.

7.1 Stir in one direction until the fish meat particles are firm, then add dry starch and mix well.

8.2 Put the fish meat and chopped mushrooms in a bowl, add a little salt, cooking wine, pepper, and onion and ginger water and mix well.

9. Squeeze the minced fish meat into small balls.

10. Arrange the fish head and tail on a plate and place the softened vermicelli on the bottom of the plate.

11. Place the fish balls on the vermicelli.

12. Put the fish into the steamer and steam for 5-6 minutes after steam comes up (note that you must wait until the water boils before putting the fish into the pot, and start timing after steam appears).

13. Heat the steamed fish soy sauce in a small bowl, then pour it on the steamed fish balls.

14. Sprinkle some shredded green onion, ginger and red pepper on the fish balls.

15. Finally, drizzle with boiling oil and stir-fry until fragrant.
