1. Prepare the ingredients for dumpling fillings. This time I made dumplings with pork and sauerkraut filling.

2.12 Add 3 tablespoons of water to the pork filling and beat it, stir clockwise, then add 3 tablespoons of vegetable oil, 1 tablespoon of sesame oil, five-spice powder and 3 tablespoons of light soy sauce at a time and continue stirring clockwise. Stir a few times each time you add something, and keep stirring for a while until the pork filling can slowly form a ball, then it is almost done, commonly known as "Shang Jin'er".

3.21 Rinse the sauerkraut, squeeze out the water and chop it into pieces. Chop the green onion and mix it with the sauerkraut. Chop it for a while to allow the two to be fully mixed.

4.Mix the sauerkraut filling and pork filling.

5. Add a small amount of salt and continue stirring clockwise to fully mix the vegetables and meat. At this time, you can taste the saltiness. If you think it is bland, you can add some salt.

6.1 This is a panoramic view of the wrapped dumplings. This time I made 35 dumplings in total. If you like bigger fillings, I guess you should make fewer.

7.2 Now start making dumplings.

8. Next comes the stage of frying the dumplings. Heat a pancake maker and lightly oil it with a brush.

9. When the oil is hot, spread the dumplings evenly on top, cover and fry for about a minute. After frying, you can pick up a dumpling and see that there is a layer of brown on the back, which is called "Gabar" in Northeastern dialect.

10. Then add a small amount of water, enough to form a thin layer, about less than 1/4 bowl. Continue to simmer with the cover on for 3 minutes.

11. Fry
