Shanxi Noodles--Braised Bean Noodles

Everyone knows that diet is particularly important for health. If you want to be healthy, you should pay more attention to your diet on a daily basis. It is best to cook at home. You just need to put in a little effort and spend some time.

1. Put the flour in a bowl, add appropriate amount of water and make it into dry cotton wool.

2. Remove the ends of the beans, wash them, and break them into small pieces; peel the potatoes, wash them, and cut them into strips similar to the beans; wash the tomatoes, blanch them in boiling water for two minutes, peel them, and chop them; chop the green onions; and mince the garlic.

3. Knead the dough and cover with a wet cloth or pot lid to let it rest for a while.

4. Put the dough on the dough board and knead it until smooth

5. Use a rolling pin to press the dough into round pieces and sprinkle some red flour to prevent the dough from sticking together.

6. After all the rolls are done, start to roll them. After rolling them five or six times, change the direction of the bottom sheet to make it uniform in thickness.

7. Place the rolling pin on one end of the dough and roll it up.

8. Sprinkle the rolled dough with red flour and cut into noodles

9. Put oil in the pot and add chopped green onion after the oil is hot.

11. After the beans change color, move them to the side of the pot, put the potato strips in the middle, and stir-fry the two ingredients evenly.

12. Put tomatoes in the middle of the dish, add a spoonful of sugar on the tomatoes, and stir fry evenly.

13. Add the pre-fried meat (skip this step if you are a vegetarian)

14. Add hot water, about the same amount as the food, and season with salt, a little saltier than usual.

15. After the pot boils, use a spoon to scoop out half a bowl of soup

16. Shake the noodles and cover the vegetables, cover the pot and turn to the lowest medium heat.

17. After five minutes, use chopsticks to loosen the noodles slightly.

18. Pour the soup evenly over the noodles, cover and simmer for another five minutes.

19. Turn off the heat, sprinkle the minced garlic and mix well.

This dish is edible for most people, including the elderly, children, and women. However, those who suffer from gastrointestinal discomfort should eat less. Although delicious food is tasty, don't be greedy.
