Matcha Pound Cake Recipe

2. Soften the butter at room temperature and beat it with an electric whisk at low speed.

3. Add powdered sugar twice. First add half of the powdered sugar and beat until the whole thing is white and fluffy. Then add the remaining powdered sugar and continue beating.

4. Add the egg liquid in four batches, beating until completely blended before adding the next batch.

5. Mix the low-gluten flour, matcha powder and baking powder and sift

7. Use a rubber spatula to stir evenly to make a uniform batter without dry powder. The batter after stirring is smooth, soft, shiny and glossy.

8. Place wax paper in the mold, pour the flour paste into the mold covered with wax paper, shake it a few times to spread the batter evenly to the corners, and smooth the surface with a scraper. It is best to make the four corners higher and the middle lower.

9. Put it in the preheated oven at 160° and bake for about 40 minutes. When the surface becomes hard and slightly discolored after 20 minutes, take out the baking tray and use a knife dipped in water to draw a line in the batter. Even if you don't draw a line, there will be natural expansion cracks. This extra step can make the cracks open along the line, and the shape will be more beautiful after baking.

10. When baking, heat water, sugar and matcha powder together and stir them into syrup. Brush the syrup on the cake while it is still hot after it comes out of the oven. Brush it all over the cake after it is removed from the mold.

11. Cut and arrange on a plate

12. After cooling, wrap it with plastic wrap and refrigerate overnight for a better taste.
