1. Put the flour in a large bowl, dig a hole in the middle of the flour and put the yeast in, put salt on the left side of the flour, put sugar on the right side of the flour, add the egg liquid and milk to mix and knead the dough, reserve a little milk, add the appropriate amount depending on the dryness of the dough, do not add butter, soften the butter at room temperature

4. After kneading the dough, let it ferment until it doubles in size. Use your fingers to poke holes in the flour and make sure it does not collapse.

5. Knead the dough gently with your hands to release the air, divide it into 6 equal small doughs, cover with plastic wrap and relax for 10 minutes

6. Take a small piece of dough and gently roll it into a round dough sheet. Don't roll it too big.

7. Use a scraper to press out 3 marks and divide it into 6 equal parts

8. Cut along the middle mark, but don’t cut it open, as shown in the picture.

9. Then make a cut on each mark, but don't cut it apart.

10. Open it into 6 small triangles

11. Arrange into a circle and pinch the joint tightly

12. Place in a warm place and ferment until it doubles in size

13. After fermentation, brush the surface with egg liquid, put it in the middle layer of the preheated oven, and bake it at 170 degrees for 15 minutes.

14. I baked bagels in the morning as breakfast for my family, so I put an egg in each bagel and baked them together. If you don't want to eat it right after it's baked, just cut the bagel horizontally (like cutting a hamburger bun) when you eat it, put a fried sunny-side-up egg in the middle, and then cover it with the other half. Pair it with your favorite sauce and drink, and you'll have a delicious breakfast.
