1. Separate the egg yolk and egg white, use the egg yolk and a little water to knead the dough, knead until smooth, cover with plastic wrap or a wet towel, and leave for more than 20 minutes.

2. Mix the filling: chop the mushrooms and celery into minced meat, add salt, chicken stock, oyster sauce, soy sauce, sesame oil, and minced ginger, stir together, add egg white, and continue stirring until it is strong.

3. Take out the dough and roll it into long strips, then divide it into several small doughs, roll them into thin skins with a rolling pin, add appropriate amount of minced meat, wrap it up, and don't seal it completely.

4. Heat low heat, add a little oil, and fry slowly until both sides are golden brown.
