1. Steam half a goose with a few slices of ginger in boiling water (the pot is too small, so you have to cut it into two pieces. In principle, it should not be cut into pieces, as the meat will shrink)

2. Heat the pot, add rice and place on the rack.

3. After the goose is steamed, apply salt on both sides while it is still hot, let it dry, place it on a rack, cover it with a lid, and wrap the gaps around the lid with wet paper. Cook it over high heat until it smokes, then simmer over low heat for about 10 minutes.
