How to cook roast duck with mushrooms and taro

1. Wash the duck.

2. Cut the duck into pieces and marinate it with appropriate amount of light soy sauce, oyster sauce and cooking wine. Adding cooking wine can remove the fishy smell.

3. Cut the konjac into strips. (Cut a small hole in the middle of the konjac strip, insert one end into it and pull it out from the back to form a beautiful knot.) If you find it troublesome, you can cut it into strips directly.

4. If you don’t mind the trouble, the finished product will look pretty good. (Can be cut directly into strips)

5. Boil water in a pot, put the konjac strips into the pot and cook for two or three minutes

6. After cooking, remove from the water and drain in a basket for later use.

7. Prepare other ingredients, including diced chili peppers, ginger slices, garlic, and bean paste. Wash cinnamon and star anise and set aside.

8. Put oil in the pot and stir-fry star anise, cinnamon and ginger slices until fragrant.

9. Then add the duck pieces and stir-fry. Fry until the duck pieces release oil.

10. When the duck changes color and produces oil, add the garlic cloves and bean paste and continue to stir-fry for two or three minutes.

11. Add the bean paste and stir-fry for two or three minutes, then add appropriate amount of water and start stewing the duck. (The water should just cover the duck pieces) Cover the pot and simmer the duck.

12. When the water is reduced to half, add more seasonings to remove the fishy smell (it has already been added once when marinating the duck pieces). Now cook for about fifteen minutes.

13. After adding the ingredients, add the drained konjac and continue cooking for about ten minutes.

14. Add konjac and cook for about ten minutes. When there is still a small amount of soup left in the pot, add appropriate amount of salt for seasoning and a little dark soy sauce to brighten the color.

15. Then add the chili pepper and stir-fry until cooked, add pepper powder and it is ready to be served.
