Many people find that the buns they eat outside are very soft, but the buns they make themselves are not soft. There are some skills to making soft buns, and these skills are reflected in the details, such as the fermentation water temperature.

1. Add sugar to baking powder

Adding 1-2 spoons of white sugar when melting the baking powder can help the dough ferment better.

2. Warm water fermentation

Mix the baking powder with warm water and add it evenly to the flour. Then don't add all the water to the dough, stir while adding. The dough should be softer than usual. Let it rise until it has doubled in size and has holes on it. When melting baking powder, it is best to use warm water that does not exceed 40°C. Too high water temperature can easily cause the baking powder to lose its activity, which will affect the fermentation of the dough.

3. Don’t make the dough too dry

When kneading the dough, if you feel it is very sticky, you can add an appropriate amount of corn oil. At the same time, avoid the dough being too dry, otherwise the steamed buns will have a hard texture.

4. Let the buns rest for half an hour before steaming them

After wrapping the buns, place them in a closed place to continue to rise for about 30 minutes before steaming them in a steamer. Because some of the air in the dough is released when the dough is kneaded and rolled, the wrapped buns can continue to rise, making them fuller.

5. Steaming time

The steaming time of buns is related to the fillings they contain. Vegetarian buns usually need to be steamed for about 15 minutes, while meat-filled buns can be steamed for about 20 minutes.

6. Do not remove the lid immediately after steaming

After the water boils, put the buns into the steamer and steam them over high heat. But be careful, do not open the lid immediately after the buns are steamed, otherwise the buns will easily shrink. Wait until the buns have cooled slightly before opening the lid.
