How to make éclairs

1. Weigh all ingredients and sift low flour for later use

2. Take a small pot, put water, milk, sugar, salt and unsalted butter in the pot, heat over medium heat and stir until the butter melts.

3. Remove from heat when boiling

4. Quickly pour in the sifted low flour

5. Use a spatula to mix quickly until there is no dry powder

6. Put the pot on the stove on low heat and stir constantly until it becomes sticky and translucent. Remove from heat

7. Beat the eggs into the paste

8. Use a manual whisk to stir until completely blended

9. Add another egg and stir until the batter is smooth

10. The prepared puff is sticky: Use a spatula to scrape the dough. When the batter drips, the triangles fall one by one. The lines are clearly visible.

11. Scrape the paste into a disposable piping bag and tighten the bag.

12. Line the baking tray with baking paper (you can fold the baking paper in half to make the grid you need). Cut a 1.5cm hole in the piping bag and squeeze out long strips of the same size neatly, leaving a large gap between each strip.

13. Preheat the oven to 180 degrees for 10 minutes, bake in the middle layer for 25 minutes, and then the puffs are ready to bake.

14. Wait for the baked puffs to cool completely (at this time, we can whip the whipped cream with powdered sugar and put it into a piping bag with a piping nozzle)

15. Squeeze the cream on top (the shape is up to you. If you are afraid of greasy cream, you can squeeze less. I used more cream for this shape.) You can start eating the delicious éclair.
