How to make egg potato pancakes?

Method 1:

Egg juice ingredients: 6 eggs, 1/2 teaspoon (3g) salt, 1/3 teaspoon (2g) pepper, Potato cake ingredients: 1 tablespoon (15ml) olive oil, 500g potatoes (cooked and sliced), 1 onion (chopped), 100g zucchini (sliced), 100g tomato (diced), 1 tablespoon (15g) rosemary, 1/2 teaspoon (3g) salt, 1/3 teaspoon (2g) pepper

1. Heat the olive oil in a pan over medium heat. Add the potato slices into the pan and stir-fry for 5 minutes. Then add the chopped onion, zucchini slices, diced tomatoes and chopped rosemary. Add salt and pepper and stir-fry for 5 minutes. Then put it into the baking tray.

2. Finally, pour the prepared egg juice on top, put it in a 200-degree oven and bake for 25 minutes.

Method 2

1. Take a larger bowl, fill it with a small amount of water, wash and peel the potatoes, and put them directly into the bowl. (This will prevent the potatoes from changing color. If you are working immediately, you can skip this step.)

2. Add salt, cumin powder and pepper powder and mix well.

3. Crack in the eggs and mix well.

4. Add 3 tablespoons of flour and mix well.

5. Finally, add chopped green onion and mix well.

6. Preheat the pan slightly, brush a thin layer of oil on it, turn to medium-low heat, add a little potato and egg paste to level the bottom of the pan. (Thickness depends on your preference)

7. After about 2 minutes, the bottom of the pancake is cooked. Shake the pan and the pancake will leave the bottom of the pan.

8. Turn over and continue frying until cooked.
