2. Heat the oil in a pan to 70%, put in the marinated pork shreds, stir-fry quickly, and when the meat turns white, serve and set aside.

3. Wash the chayote, cut into shreds and set aside.

4. Soak the dried fungus in warm water, add a little flour, wash it clean, cut into shreds and set aside.

5. Wash, peel, and cut into strips half a carrot (1 small one) for later use.

6. Chop the onion, ginger and garlic; cut the coriander into sections.

7. Prepare a small bowl, add a little dark soy sauce (optional), 2 spoons of light soy sauce, 2 spoons of balsamic vinegar, 2 tablespoons of sugar, 1 teaspoon of chicken essence, appropriate amount of pepper powder, and half a small bowl of cold boiled water, mix into sweet and sour sauce and set aside.

8. Heat another pan of oil to 50% hot, sauté the chopped onion, ginger and garlic, then add 1 tablespoon of chopped pepper (if you have bean paste, you can add 1 tablespoon of it).

9. Stir-fry over low heat until fragrant, then add in shredded wood ear mushrooms and stir-fry evenly.

10. Pour in shredded carrots and stir well.

11. Pour in the shredded chayote and stir well.

12. Pour in the fried pork tenderloin shreds and stir well.

13. Add cornstarch to the sweet and sour sauce, mix well, pour into the pot and stir-fry quickly.

14. Pour in the coriander segments and add appropriate amount of salt. When the soup thickens, you can serve it.
