Leave a little oil in the stir-fry, quickly stir-fry the broad beans, then add the shrimps, stir-fry for a few more times, pour in the prepared sauce, and stir evenly after the sauce boils. 2. Stir-fried broad beans Pour cold oil into a hot pan, add garlic slices after the oil is slightly hot, stir-fry until fragrant, then add broad beans and stir-fry until the beans turn green and darker; add a small amount of water, cover the pot and simmer for 4-5 minutes (if you are not sure, you can taste it, the beans will be soft when they are crispy), add salt and a small amount of sugar; finally, add a handful of chopped green onions and stir-fry for a while before serving. 3. Lily Bulbs, Shrimp and Broad Bean Rice Peel the skin of fresh broad beans and make broad bean rice (it will be more tender this way, but of course you can also leave the skin on). Freeze the live prawns in the refrigerator for 20 minutes, then remove the head, shell and intestines (it will be easier to peel the live prawns if you freeze them in the refrigerator for 20 minutes before peeling them), and the prawns will be ready. Mix well with a little salt, white pepper and cooking wine and marinate. Break fresh Lanzhou lilies (ordinary lilies can also be used, as Lanzhou lilies taste better), separate them into petals, rinse them and drain them. Put water in a pot and bring it to a boil, pour in the broad bean rice and blanch it for one minute. Take out the blanched broad beans, rinse with cold water, drain and set aside. Heat the pan and add oil. When the oil is warm, pour in the marinated shrimps and stir-fry until they change color. Set aside. Use the remaining oil in the pan to stir-fry the blanched broad bean rice for about one minute. Pour in the fried shrimps and drained lilies, add a little salt, a little sugar and some sesame oil, stir-fry evenly and serve. |
