How to stir-fry liver tips

1.1 How to cut out a liver with each tip? First, cut the liver from the middle with a 45-degree slanted knife (the angle between the knife and the cutting board is 45 degrees), and then cut it into thin slices. The liver cut in this way is called the liver tip.

2.2 The initial processing of pig liver is very important. Since pig liver is a detoxifying organ, you should soak the whole pig liver in water with white vinegar for 30 minutes. Then, in order to remove the peculiar smell of the liver, take out the liver, sprinkle a large amount of salt on both sides, and rub the liver with your hands until it becomes shiny. Rinse the salt off with clean water and then cut it.

3. Add salt, cooking wine and soy sauce to the chopped liver tips, mix well to make it flavorful and firm, then add dry starch and mix well. Marinate for 1 minute. Never use wet starch

4. Heat the oil in a pan until it is 70% hot, add the pork liver, stir-fry until cooked, and set aside.

5. Adding a bowl of sauce is the key to ensure stir-frying. Put chopped green onion, ginger and garlic in a bowl, then add salt, MSG, cooking wine, vinegar, soy sauce, sesame oil and water starch and mix well for later use

6. Pour the sauce directly into the pot. When it becomes thick, add the yellow claw slices and the liver tip that has been smeared with oil. Stir-fry quickly and serve.
