How to cook pickled fish

To make a good dish is not as difficult as everyone imagines. Just prepare the ingredients and tableware, control the heat, and then follow the steps for boiled sauerkraut fish below. I believe you can do it.

1. Chop and clean the grass carp, and cut the whole fish into pieces: cut the thick part of the grass carp into large slices with a slanting knife (not too thin, about 0.5 cm thick is best); remove the fish head, fish tail and fish fillets as ingredients for making soup. Wash and slice the ginger, cut the green onion into oblique sections, peel the garlic cloves, wash and cut the coriander and green onion into sections for later use. Add some ginger slices, cooking wine, eggs, and pepper to the fish fillets, fish heads, and other soup ingredients. Marinate evenly, add 1 teaspoon of oil, stir evenly, and let stand for about 10 minutes.

2. Heat the wok and add oil. Fry the peppercorns and dried red peppers on medium-low heat until fragrant. Remove from the pan and drain the oil for later use. Add the ginger slices and garlic and stir-fry until fragrant. Add the sauerkraut into the wok and stir-fry until fragrant.

3. Add appropriate amount of water and fermented glutinous rice juice and bring to a boil

4. Pour the fish head, fish tail and other soup ingredients into the pot and boil until fragrant. Taste it and add sugar and salt as appropriate (if the sauerkraut has salty taste, add salt as appropriate). Pour the marinated fish fillet into the pot.

5. Boil over high heat until the fish changes color and is cooked through. Remove from heat and pour the soup and fish fillets into a warm casserole. Place the fried peppercorns and dried red pepper on the fish slices, sprinkle with chopped green onions and coriander, boil 1 tablespoon of oil and pour it on top, and the fragrant pickled fish is ready to be served.
