1. Put high-gluten flour, low-gluten flour, dry yeast, water and salt into a large bowl, and knead the dough until the surface is smooth and not sticky.

2.12 Cover with plastic wrap or gauze and place in a warm and humid place (such as: put two cups of hot water in a microwave) to let the dough rise for about 1 hour until it doubles in size.

4. Use a rolling pin to roll the relaxed dough into an oval shape.

5. Fold the dough into thirds, pinch the dough with your fingers while rolling, and finally roll it into a thin long stick shape.

6. After shaping, place the dough into a baking tray, use a knife to make a few long and thin cuts on the surface, and then place it in the baking tray to rise for about 30 minutes. (As the old saying goes, put two cups of hot water next to it~)

7. Preheat the oven to 200 degrees. Use a spray bottle to spray some water on the surface of the bread before putting it into the oven (I don’t have a spray bottle so I just brush some water on it). Place it on the upper middle layer of the oven and bake for about 20 minutes until the surface turns brown.

8. It’s out, haha. You have to eat this baguette quickly, otherwise it will become soft very quickly. So, it’s better to buy it from the supermarket, haha.
