Cooking Skills: Scallion Grilled Skewers

1. Wash the raw meat and cut it into 4-6g pieces for later use.

2.1 Place the meat in the refrigerator and marinate for 3 to 4 hours until the marinade is completely absorbed by the meat. Mix the weighed flour and marinated meat evenly, then thread them through skewers. It is best to put a piece of fat between every two pieces of lean meat to increase the flavor. You can roast it in your own fire.

3.2 Mix the marinade, egg white and ice water in proportion to make a marinade, then add it to the chopped meat to ensure that the marinade is in full contact with the meat. If you have a sturdy plastic bag, put the meat and the marinade into the bag, tie it tightly, and beat it for 5 to 10 minutes to ensure that the meat is evenly flavored.

4. The skewers can be baked in the oven at 180-200℃ for 8-10 minutes; or you can grill them over an open flame to increase the aroma of smoked meat.
