How to make golden spiced smoked fish

1. Pre-treatment of fish: Cut the cleaned fish into 1 cm thick slices as shown in the picture (large and thick fish can be split lengthwise first and then cut into small pieces), mix with scallion, ginger and a few drops of cooking wine, marinate for 10 minutes, then remove the scallion and ginger for later use, place the marinated fish pieces on a perforated plate and dry for 1 hour to remove the moisture on the surface (you can also use kitchen paper to dry it)

Preparation of smoked fish sauce: Heat a wok and add a few drops of oil to lubricate the wok, add scallion and ginger and fry over low heat until fragrant, pour in soy sauce and stir-fry until fragrant, then add 1.5 cups of water, then add all the spices and rock sugar and simmer over low heat for 5 minutes, turn off the heat and let cool, then add steamed fish soy sauce and rice wine, and add salt according to your taste

3. Frying and marinating fish: Put the dried fish pieces into a pan over medium heat and fry until golden brown. Drain the oil and pour into the marinade. Soak for 2 hours. Stir well to make sure every piece of fish is covered with marinade. When eating, pick out the fish and place it on a plate. Do not put the rest back into the marinade. You can dry it and eat it as a snack.
