1. Soak the ingredients in clean water for a long time, then pull out the hair follicles remaining on them, wash them and put them in a pot, add smashed ginger and appropriate amount of cold water, add appropriate amount of cooking wine, blanch them over low heat to remove the blood water, drain the water and set aside.

2.1 After the ingredients are marinated, take out the old broth, bring it to a boil, and add the corresponding spices to the flavor of the old broth. Duck wings have a stronger fishy smell than duck stomach, and they taste better only when they are spicy. So I focused on adding peppercorns and dried chili peppers to the old broth last time, and added chili powder and pepper powder when marinating. After the ingredients are put into the pot, the broth turns into red broth, which is the right color.

3.2 Take photos of what you forgot. hehe. Add salt, cooking wine, pepper powder, five-spice powder, and chili powder to the boiled ingredients and marinate for more than 6 hours, preferably overnight.

4. After putting the ingredients into the marinade, bring to a boil over high heat, then reduce to low heat, making sure it is not too hot, just small bubbles appear, cook for 30 minutes (depending on the amount) until the duck wings are 80% cooked, then turn off the heat and simmer for another 20 minutes. Wait for it to cool naturally before you can start cooking.
