Method 1:

1. Crack the eggs into a bowl, take out the egg yolk, leaving only the egg white.

2. Wash the ribs, blanch them in boiling water, then take them out and put them into a bowl with egg white.

3. Put pepper powder, starch and a small amount of salt in a bowl and marinate for about 30 minutes.

4. Cut the winter melon and carrot into slices respectively.

5. Chop the ginger, garlic and coriander separately.

6. Add appropriate amount of oil in a hot pan and heat it. First, add chopped ginger, garlic and star anise and stir-fry for about 3 minutes. Then add winter melon and carrots and stir-fry for about 10 minutes.

7. When the winter melon and carrots are 80% cooked, add boiling water and boil, then add the marinated ribs and cook for about 20 minutes.

8. Add appropriate amount of salt and chicken essence to the pot according to your personal taste.

9. Finally, remove from heat and add coriander.

Material

200 grams of winter melon, 200 grams of carrots, 200 grams of spare ribs, 30 grams of coix seeds, and appropriate amounts of onions, ginger, coriander and salt.

2. Put the ribs into the pot, add appropriate amount of water, boil over high heat and remove the foam;
