How to make ginger and scallion chicken

1. A handful of green onions, a piece of ginger, half a fresh chicken with the internal organs removed, and the chicken butt cleaned

2.1 While the chicken is marinating, slice some of the ginger and scallions, and chop the remaining ginger and scallions into fine pieces.

3.2 Apply a layer of salt evenly inside and outside the chicken, then apply soy sauce and dark soy sauce once more, and marinate for a while

4.1 Put some oil in the pot, add ginger slices and scallions and sauté until fragrant

5.2 Ginger and Scallion Chicken Seasoning Sauce: 1 tablespoon soy sauce, a small amount of dark soy sauce, 1/3 tablespoon oyster sauce, 1/3 tablespoon cooking wine, add 1 bowl of rice and water and mix well

6. Put the chicken into the pan with sautéed ginger and scallions. When the skin on one side turns slightly yellow, turn it over and fry the other side.

7. After the chicken is fried until both sides are slightly browned, add the sauce, bring to a boil over high heat and then simmer over low heat.

8. Turn the chicken over twice during the cooking process. Use a spoon to pour the sauce on the chicken to make it more flavorful and look better.

9. Cook over low heat for 25 minutes, then turn to high heat to reduce the sauce. If you are not sure whether the chicken is done, you can poke the chicken with a chopstick. If it goes in easily, it is done.
