3. Wash the pork, it is best to choose meat with fat and lean meat, so it will taste better. It doesn’t matter if you don’t like fat and lean meat. This little bit of fat will be used to extract the oil when frying later.

4. Put water in a pot and bring it to a boil (you can chop the meat while the water is boiling), blanch the celery in the boiling water, do not turn off the fire, wait for the water to boil again for about half a minute, and then take out the celery when it is slightly soft.

5.121 Celery will be very hot when it is taken out of the boiling water. When the pork filling is chopped, it will be basically cold. At this time, chop the celery (it is best to cut it, chopping celery will make it everywhere), squeeze out the water

6.212 Chop the pork into minced meat. It is best to chop it yourself. Some meat shops can mince the meat, but I think they don’t wash it clean. Just rinse it under cold water. It is difficult to wash off the things stuck on the meat.

7.1 After the oil is heated, add the pork filling and stir-fry. It is best to fry out all the oil in the fat and the pork should be cooked through.

8.2 Pour out the water in the pot, add a little oil after it is dried, because there is fat in the pork, just add a little oil to ensure that it does not stick to the pot

9. Turn off the heat, pour the celery into the pot, add salt, chicken essence, balsamic vinegar, soy sauce, and steamed bun and dumpling seasoning (optional) and mix well.

10. This is the prepared filling. Set it aside to cool. The weather is cold now. There is lard in the filling. It will be easier to roll after it cools and solidifies. In fact, this is the process I usually make dumpling fillings. So if you don’t like pork and celery, just replace the filling with your favorite dumpling fillings. The premise is that there is not too much water in the filling.

11. Take out the spring roll wrappers from the bag and peel them off one by one. The wrappers are very thin, so be careful and take out one and spread it out flat.

13. Roll forward from the corner with filling until about halfway, forming an equilateral right triangle

15. Continue to roll forward. After rolling, remember to put the closed part down and press it to prevent it from loosening. This way, you don’t need to use other things to stick the seal.

17. Wash and dry them, add more oil and heat it up. The oil should be at least half the thickness of the spring rolls, otherwise it will be difficult to fry (the fried oil can be reused, don't worry about wasting it)

19. Put it in the oil pan, don't let go of the chopsticks, until the spring rolls are shaped and will not fall apart, fry the closed part first, then turn it over and fry it again

20. The spring roll skin and filling are both cooked, so don't fry them for too long. You can take them out when the skin is a little yellow. If you fry them too long, they will easily become mushy if you can't finish them.

21. It's all fried. It looks good. I couldn't help but take a bite. It's really delicious. The skin is crispy and the filling is fragrant.
