Special Casserole Eggplant Casserole

Remove the stems of the eggplants and cut them into dice. Soak them in light salt water for 10 minutes. Add the minced meat and cornstarch and mix well.

Cut half an onion into pieces. Cut ginger, garlic, dried chili peppers, millet peppers and green onions into pieces and set aside.

Add oil, squeeze out the dried eggplant and fry until soft. Remove from the pan! Add the minced meat and stir-fry until it changes color. Add the prepared ginger, garlic, chili and scallion and stir-fry until fragrant. Then pour in the fried eggplant, add appropriate amount of light soy sauce, salt, chicken powder and pepper, stir-fry for a few times and serve!

④Put a small amount of cooking oil in the casserole, heat it up, pour in the onion and stir-fry until soft, then pour in the eggplant that was previously served and simmer on low heat for about ten minutes, sprinkle with chopped green onions and serve.

Two special casserole with chestnuts and beef

Peel the chestnuts and cook until they are almost cooked (depending on how soft or hard you like the chestnuts)

Cut the beef into pieces about the same size as chestnuts. Cut the green pepper diagonally, cut the dried chili into sections, slice the ginger, and tap the garlic with a knife until it cracks.

After blanching the beef, remove it from the water and put it into a pressure cooker. Add star anise, ginger slices, a little dried chili segments, a little wine, 1 drop of white vinegar, and water. Bring to a boil over high heat and then turn to medium-low heat. After about half an hour, the pressed beef will be cooked.

In another wok, add oil, then add Sichuan peppercorns and dried chili segments. Over low heat, fry the Sichuan peppercorns slowly until fragrant as the oil temperature rises. Add garlic to the pan and stir-fry the beef over high heat. Add a little white wine and stir-fry quickly over high heat.

The aroma of wine is overflowing. Add chestnuts to the pot, add soy sauce and light soy sauce and stir-fry evenly. Pour the remaining soup from the beginning of the beef stew into the pot and boil it. Start stewing until the soup is almost done. Add green pepper segments to the pot and add salt and a little MSG to season.

Heat a small casserole on the fire, pour a few drops of sesame oil, and when the sesame oil is hot, pour the prepared chestnut beef into the small casserole, cover it and simmer on low heat for 1 or 2 minutes. Don't let it take too long.

Tips

The beef must be stewed in advance! ! If you don’t stew it in advance, it’s hard to cook it in the wok! ! ! ???

This recipe works great with ribs too! ! But you don’t have to simmer it for half an hour! ! The ingredients are the same, just put water in the pot to cover the ribs, and cook until the ribs are slightly soft! ! ! ! ! If you like to eat something a little bit worse! ! ! ! !
