How to make homemade Thai lemon chicken feet

[Thai spicy and sour lemon chicken feet]

Prepare the materials:

500g raw chicken feet, 1 bunch of green onions, 1 bunch of coriander (omit if you don’t like it), 1 small piece of ginger, 4-6 cloves of garlic, 1 lime, 10 chili peppers. Prepare the seasoning:

Salt to taste, 2-3 tablespoons sugar, 3 tablespoons soy sauce, 2 tablespoons fish sauce (can be omitted if not available, use salt instead), 4-5 tablespoons white vinegar. Preparation process:

1. Wash the chicken feet, cut off the toes, and chop them into small pieces for later use. Boil water in advance and put it into a clean container to let it cool thoroughly.

2. Slice the ginger and garlic, chop the chili pepper, cut the green onion and coriander into sections, and slice the lime for later use.

3. Add enough water to the pot, add chicken feet, two slices of ginger, and a spoonful of cooking wine, bring to a boil, and continue to cook for 10 minutes when blood foam appears, then turn off the heat.

4. Take out the chicken feet and rinse them repeatedly with running water to remove blood foam and grease.

5. Prepare a large bowl of ice water or cold water and soak the rinsed chicken feet in it. Let the chicken feet cool thoroughly, while the skin shrinks and the meat becomes crispy.

6. While the chicken feet are cooking, prepare the soup for soaking the chicken feet. Soak the ginger slices, garlic slices, chopped millet pepper, green onion, and coriander in the cooled boiled water that has been cooled in advance. Then add appropriate amounts of salt, sugar, light soy sauce, fish sauce (can be omitted, just add more salt), and white vinegar. Then squeeze out as much lemon juice as possible from each slice of lime, and soak them together with the lime slices. Stir repeatedly until the salt is dissolved, then taste it. It should be sour, sweet and salty with a slightly spicy taste. The spiciness will not come out so quickly and needs time. Make slight adjustments based on your taste. The soup should be a little saltier than you want the chicken feet to taste, and the sourness should also be a little stronger.

7. Prepare the soup, take out the soaked chicken feet and soak them in it. You can put them in a sealed box or directly cover them with a layer of plastic wrap and refrigerate them overnight. You can take them out and eat them. If you like it to be more flavorful, you can soak them longer, but it is best to eat them all within 2 days.
