How to make noodle soup?

How to make noodle soup

1. Add yeast, salt, an egg and chopped green onion to the flour and mix well.

2. Add water and stir into a thick batter, like a croquette-like batter that can stand upright for a while when chopsticks are put into it. It can be thicker in summer and thinner in winter.

3. Let it ferment for two to three hours, stirring the dough twice with chopsticks along the edge of the bowl. When the dough is fully fermented and full of bubbles, it can be fried.

4. Pour two centimeters of oil into the frying pan and start frying when the oil is 70% hot. Keep the fire medium-low and let the noodles soak in the oil pan and expand into a white

5. Use a chopstick in each hand to pick up a small piece of dough and slowly put it into the pot. Quickly fill a pot with noodles. Note that there is a little trick when putting the noodles in. Don't put all the noodles in at once. Instead, put in the lower half first, then wait a second or two, and then put in all the noodles.

6. Remove from the pan when both sides are golden brown.

7. The ones I make don’t look as good as the ones sold outside, but they taste better. My daughter will never eat the ones sold outside again. And I can trust the ones I make myself, the oil is definitely better.

Tips

It tastes slightly salty and goes great with spicy soup or oil tea.

Method 2 for making noodles:

1. Put the flour in a bowl, dissolve the yeast powder with warm water, pour it into the flour, then add appropriate amount of water, add a small amount of salt and stir well.

Pay attention to adding the right amount of water to make the dough elastic. Too much water will make the batter thin, which is not good; too little water will make the dough hard, which is not good;

2. Beat the prepared batter along the edges with chopsticks for a while, and then leave it to ferment.

Note that during the fermentation process, you can use chopsticks to beat the batter several times to ensure that the batter contains sufficient air.

3. When the batter has fermented until many bubbles are seen on the surface, you can start frying.

4. Put oil in a frying pan. When the oil is hot, use both hands to pick up a small piece of dough with a pair of chopsticks each, and slowly put it into the pan.

5. Fry until the bottom is golden brown, turn the noodles over, fry until cooked and remove from the pan.
