Spicy Swimming Crab Recipe

Two bay leaves

Onion, ginger and garlic

Salad oil

Salt to taste

Steps

1. Select fresh swimming crabs and put them in water for a while to let them spit out impurities.

2. Open the back cover, remove the crab gills, crab intestines, crab stomach and other inedible parts, and remove the crab claws. The small claws can be left on.

3. Marinate the crab with half a teaspoon of cooking wine and a small amount of salt for half an hour.

4. Prepare the auxiliary ingredients while the crab is marinated. Dice the green and red peppers, slice the garlic and ginger, dice the onions and chili peppers, and cut the celery into sections.

5. Coat the marinated crab with dry starch

7. Heat the pan, add oil, add dried chili peppers and peppercorns, stir-fry until fragrant, add onions, ginger, garlic, bay leaves, star anise, and Lao Gan Ma, stir-fry until fragrant and red oil comes out

8. Add crab shells and crab claws and stir-fry, add a small amount of soy sauce and salt to enhance the flavor

9. Add green and red peppers, chili peppers, and celery and stir-fry. If the bottom of the pot is too dry, you can add a small amount of water as appropriate.
