How to make pie fillings

Pie is a kind of food made with flour, various meats and vegetables. If you want the pie to be delicious, it is very important to season the pie filling well. 1. Meat filling for meat pie

1. Prepare the ingredients: 250 grams of minced pork, 1 egg, 40 grams of dry yellow paste, 8 slices of old ginger, 1 scallion, 20 peppercorns, 1 star anise, 2 spoons of chicken essence, half a spoon of MSG, 3 spoons of bak kut teh powder, and 2 spoons of sugar.

2. Soak peppercorns and aniseed in boiling water for 40 minutes.

3. Add it to the dry yellow paste in small amounts and several times to slowly dilute the dry yellow paste.

4. Add onion, ginger, chicken essence, MSG, eggs, sugar and Bak Kut Teh powder to the meat filling.

5. After the dry yellow sauce is completely diluted, pour it into the minced meat in small amounts several times.

2. Method 2 for making meat filling for pies

Ingredients: 2 zucchinis, some pork filling, some flour, some coriander, some chopped green onion and ginger, some soy sauce, some cooking wine, some thirteen spices, some pepper, some peanut oil, some salt

step:

1. Mix flour with warm water to make a soft dough and let it rest for half an hour.

2. Wash the zucchini, shred it horizontally, add salt, and rub it with your hands for a while, then set it aside to drain.

3. Add chopped green onion, ginger, cooking wine, thirteen spices, salt, pepper, soy sauce and peanut oil to the meat filling and stir clockwise.

4. Drain the zucchini and put it in the meat filling bowl. Chop the coriander and put it into the meat filling and mix it with the zucchini in a clockwise direction.

3. How to make the pie:

1. Add dry yeast mixed with warm water to the flour (as per the instructions) and knead thoroughly.

2. Make the meat filling: chop the pork belly into filling, add salt, pepper, a little MSG, chopped green onion, and a little water (don’t add water if you are adding vegetables), stir well, repeat several times. It is best to stir in one direction, then put it in the refrigerator and let it stand for 30 minutes.

3. Use the fermented dough to wrap the meat filling in any size and press it flat (to the appropriate thickness).

4. Pour oil into a frying pan, light the fire, put the prepared pies in, add cold water, flatten the top of the pies, cover the pan, turn on high heat, and when the water is almost dry, remove the lid. Change to medium heat, slowly turn the pan to let the edge of the pan roast on the fire, fry until golden brown, then turn it over and fry until golden brown too.
