1. First, you need to process the winter bamboo shoots: peel them, cut off the old parts at the roots, and add cold water to the pot.

2. Cook for about 20 minutes after the water boils, then remove and rinse with cold water

6. Wash and cut into strips, and save the clean water from the last soaking of mushrooms

7. Soak the sweet potato vermicelli until soft

10. Cut the cabbage into shreds. It is best to cut the cabbage stalks into three pieces and then cut them into thin shreds.

13. Cut green onion into sections and ginger into shreds

15. Add a small amount of oil to the wok

16. Add fat and slowly fry over low heat to extract oil

18. Add shredded pork over low heat

19. Slide until it changes color and push it aside. Add scallion and ginger to the pan.

20. Turn to medium heat and stir-fry until fragrant. Add bamboo shoots, mushrooms and carrots and stir-fry for about 1 minute.

22. Add shredded cabbage

23. Add appropriate amount of salt and stir fry for about 1 minute

24. Add sweet potato vermicelli

25. Add a large bowl of water for soaking mushrooms

26. Bring to a boil over high heat, cover the pot and simmer over medium heat for about 5 minutes.
