How to cook long fish with onion

Onions can be used to make many dishes and they are very good at enhancing flavor. Onions also have anti-aging effects and have good bactericidal effects. Many people like to eat onions, but you must brush your teeth after eating onions, otherwise your mouth will have a strong smell. The method of stir-frying shredded fish with onions is actually similar to other dishes, but you need to pay attention to the integrity of the shredded fish. The heat should not be too high, otherwise the long fish shreds will be burnt too much.

Onion (scientific name: Allium cepa), also known as bulb onion, round onion, jade onion, shallot, Dutch onion, leather tooth, etc., is a biennial herb of the Liliaceae family and Allium genus. Onions contain prostaglandin A, which can reduce peripheral vascular resistance and blood viscosity. It can be used to lower blood pressure, refresh the mind, relieve stress, and prevent colds. In addition, onions can remove oxygen free radicals in the body, enhance metabolism, resist aging, and prevent osteoporosis. They are a health food suitable for middle-aged and elderly people.

Onions are widely distributed in China and are cultivated in all parts of the country, north and south. They are one of China's main grown vegetables. China's onion producing areas mainly include Fujian, Shandong, Gansu, Inner Mongolia, Xinjiang and other places.

Storage method:

1. Hanging storage method: braid the dried onion leaves into long braids, combine the braids into bundles, with about 60 onions in each bundle, and then dry them in the sun for 5-6 days (prevent rain), until the onions are fully dry and the necks have completely turned into leather, then hang them under the eaves or indoors. If the items are hung indoors, the room must be well ventilated and kept dry.

2. Stacking method: Choose a place with high terrain and good drainage. First use rice straw or wheat straw as the bottom, then put two layers of reed mats, then pile the leafless onions on the reed mats, surround them with reed mats, and tie them tightly with ropes to avoid direct sunlight or rain infiltration. The third is the treasury method. If there is a constant temperature storage, you can remove the onion leaves and spread them directly on the vegetable rack for storage.

1. Prepare all the ingredients: oyster sauce, onion, red pepper, and shredded fish fillet.

2. Cut the fish fillet into strips and add salt, cornstarch and a little chicken essence, mix well and marinate for a while.

3. Heat oil in a wok and add the marinated fish shreds.

4. Fry the fish strips in the pan until they change color.

5.Finally, add onion, red pepper and oyster sauce and stir-fry evenly.

6. Fry all the ingredients.

7. Serve on a plate. Onions do not need to be fried too much, just fry until they are a little raw, so that the onions can maintain their refreshing taste.
