How to make espresso blueberry muffins

1. Take 142 grams of blueberries and 1 teaspoon of sugar, put them in a pot, heat over medium heat, and squeeze them slightly with a wooden spoon until the blueberries become a thick sauce and the volume is reduced to 1/4 cup, 60ML. About 6 minutes, let cool for 10-15 minutes. Add the remaining sugar to the eggs and beat until pale and puffy. Add butter and vegetable oil and mix until combined. Add yogurt, milk and vanilla essence and mix well.

2. Mix flour, salt and baking powder, add in egg mixture in step 2, and then add in remaining blueberries. Divide evenly into 12 muffin cups (the molds should be greased to prevent sticking), and fill them up

3. Divide the blueberry jam in step 1 evenly on the surface of 12 muffins and use chopsticks to make 8 shapes to form a marble pattern.

4. I also sprinkled some chopped nuts and sugar mixture on the surface, which was left over from making baklava last time (see here). Bake in a preheated oven at 218C for about 18 minutes, until a toothpick inserted comes out clean. After cooling for 5 minutes, remove from the mold and transfer to the grill to cool
