Too much gelatin. Next time if you use plain unsweetened yogurt, add some sugar and reduce 5 grams of gelatin.

2. Cut gelatin into small pieces and soak in ice water until softened.

3. Add sugar to the whipped cream and beat until 60% distributed. Put it in the refrigerator for later use.

4. After draining the water, add a little yogurt and put it in the microwave on high heat for 30 seconds! ! ! , stir well.

5. Pour the gelatin yogurt liquid into all the yogurt and mix well.

6. Add whipped cream and mix well. It is best to use a spatula to stir at this time, because continuing to whip with your hands will intensify the whipping of the cream, resulting in a rough finished product. Pour the mixed yogurt mousse paste into the mold. If you have cake slices, put one slice of cake in the mold first and then pour the mousse paste. Refrigerate for 1 hour, or freezer for 20-30 minutes. Just make sure it doesn't stick to your hands.

7. Continue with the upper layer. Soften the cream cheese at room temperature, and use a spatula or hand whisk to stir until smooth. It is best to heat it over water, but don't use too hot water, just enough to soften the cheese.

8. One egg yolk plus 20 grams of sugar

9. Heat the water in a simmering water while stirring until the liquid turns white and thick. The purpose is to boil the egg yolk and disinfect it.

10. Whipped egg yolk liquid

11. At this time, soak a piece of gelatin in ice water, take it out and put it into the egg yolk liquid, stir while it is hot until it melts.

12. Pour the egg yolk paste into the cheese paste and stir well.

13. Beat the cream until 60% distributed and mix with the cheese paste.

14. Pour on top of the frozen yogurt layer. Keep refrigerated or frozen

15. Peel some pistachios and cut them into small cubes.

16. Use a hair dryer or hot towel to demould the refrigerated cake. Stick on the pistachio decoration.
