How to cook Chang Bian Fish

We often see some strange-shaped fish in the market, especially those from the deep sea, which look even more surprising. For example, Changbian fish is a kind of fish that looks like a round plate, just like a folding fan. Although its appearance is rather peculiar, its taste is unmatched by many fish and it is also very nutritious. So, how to make Chang Bian fish the best?

Braised Pomfret Bream

raw material:

3-4 pomfret, 6 cloves of garlic, 3 shallots, 1 bunch of green onions, 1 piece of ginger, and appropriate amounts of vinegar, oil, light soy sauce, sugar, and white wine.

practice:

Clean the fish first and drain it for later use.

Clean the green onions, ginger, garlic and shallots, cut into sections/slices, and spread them loosely on the bottom of the pot.

Put the fish on top so that it barely touches the bottom of the pot.

Start with a low heat, then slowly pour oil along the edge of the pot, increasing or decreasing the amount of oil as appropriate; turn to medium heat to bring out the aroma, pour in white wine, add appropriate amounts of light soy sauce and vinegar, a little sugar, and add warm water to slightly cover the fish body. Cover the pot, bring to a boil, then reduce the heat to low and cook until the soup is of appropriate amount.

Remove from the pot and place in a bowl.

Step 1

Remove the internal organs of the pomfret, clean it, and make a few diagonal cuts on both sides of the fish body.

Step 2

Put a few slices of ginger in the fish's belly. Apply some cooking wine on the fish and sprinkle a little salt. If you like light taste, you can leave it out because you will need to add steamed fish soy sauce after steaming.

Step 3

After the water in the steamer boils, put the fish in and steam for ten to fifteen minutes depending on the size of the fish.

Step 4

Cut the green onion into thin strips and add some shredded red pepper for garnish. If you don’t have green onions, you can use chives.

Step 5

After the fish is steamed, some water will come out of the plate. Pour out the water, or leave a little bit.

Step 6

Put the chopped green onion and chili on the fish, then pour in an appropriate amount of steamed fish soy sauce.

If you like spicy food, you can put dried chili peppers on the fish, or even a little coriander.

Step 7

Put some oil in the pan and heat it up, then pour it over the fish. Don't just pour the oil in one place, try to pour it over the chopped green onions.

Step 8

The scallion shreds are especially delicious after being blanched in oil.

Tips

If a lot of water is released after steaming the fish, you can pour out some of it.
