How to cook smoked fish

Material:

Smoked fish, bean sprouts, onions, ginger, pickled pepper, peanut oil, salt, chicken powder, dried red pepper, garlic, sweet potato starch

practice:

1. Use a knife to chop off the fish head and split it in the middle. Slice the fish into fillets starting from the tail and mix well with sweet potato starch.

2. Wash the bean sprouts and set aside various seasonings.

3. Put oil in the pot, fry the garlic first, add the peppercorns, onion and ginger, stir-fry the fish bones, and add the pickled peppercorns. Bring water to a boil, simmer for 10 minutes, add mung bean sprouts and bring to a boil.

4. After the bean sprouts are cooked, add salt and chicken essence to season and put them into a bowl. Then use chopsticks to put the fish fillets into the pot one by one.

5. When the water boils, it is cooked and the soup can be poured into the bean sprouts.

6. Add peanut oil to the pot, add dried chili peppers and Sichuan peppercorns and simmer over low heat until the spiciness comes out, about 2 minutes.

7. Pour the cooked chili on the fish fillets.

Ingredients: 40 grams of anchovy, a little minced garlic, a little minced ginger, a little minced green onion, 1 bowl of rice, a little soy sauce, a little rice wine, a little pepper, a little salt. Method: 1. Wash and drain the anchovy for later use. 2. Heat the pan, pour in a small amount of oil, add minced garlic and ginger and stir-fry until fragrant, then add the anchovies and stir-fry until fragrant. 3. Add all the seasonings in step 2, add chopped green onion and stir-fry until well-flavored, then remove from the heat. 4. Add the fried fillings from step 3 into the rice and press into the desired shape with your hands. Ingredients: 120g anchovy, 10g garlic sprouts, 5g chili pepper, 30g salted peanuts, 1 tsp white pepper powder
