Chicken fried steak marinade recipe

Chicken is very nutritious and is a type of meat that many people love to eat. There are many ways to eat chicken, it can be stewed, stir-fried, pan-fried, or deep-fried. Fried chicken steak is a snack that many young people like to eat. There are many fried chicken steak shops now. Zhengxin Chicken Steak and Taiwan-style Chicken Steak are both very famous chicken steak brands in recent years. If you want to make fried chicken steak delicious, the marinating recipe is extremely important. When we are at home, we can make our own fried chicken steak according to the following recipe.

1. Fried chicken marinade recipe

Material:

1 bone-in chicken breast, salt and pepper, 2 cups sweet potato starch, 2 scallions, 10 grams of ginger, 40 grams of garlic, 100cc of water, 1/4 teaspoon of five-spice powder, 1 tablespoon of fine sugar, 1 teaspoon of MSG, 1 tablespoon of soy sauce paste, 1/4 teaspoon of baking soda, 2 tablespoons of cooking wine

practice:

1. Remove the skin from bone-in chicken breast.

2. Cut the bone-in chicken breast in half.

3. Cut the chicken breast horizontally from the middle to the bottom, but do not cut it off.

4. Slice the chicken breast into desired thickness to make chicken fillet.

5. Put the onion, ginger and garlic into a juicer, add water and blend into juice.

6. Use a strainer to filter out the residue from step 5, add the remaining marinade ingredients and mix well to make the marinade.

7. Put the chicken chops prepared in step 4 into the marinade, cover with plastic wrap and refrigerate, marinate for about 2 hours.

8. Take out the marinated chicken fillet, filter out excess marinade, put it into the frying powder and press it with your palm to make the sweet potato powder stick to it. Turn it to the other side, press it slightly, then pick it up and gently shake off the excess frying powder.

9. Let the battered chicken sit for about 1 minute to allow the batter to absorb. Heat the oil in a pan to about 180°C, put the chicken in and fry for about 2 minutes. When the chicken fillet is fried until the surface is golden and crispy, remove from the pan and sprinkle with appropriate amount of pepper and salt.

2. Recipe and marinating method of fried chicken steak

The ratio of soy sauce to rice wine = 4:1, the ratio of five-spice powder to sugar = 1:2 (don’t put too much five-spice powder, about one teaspoon is enough), one teaspoon of minced garlic, appropriate amount of white pepper powder, and appropriate amount of dark sesame oil. Marinate the chicken breasts for at least 6 hours. After the chicken is fried, sprinkle with seasoning powder.

3. Fried chicken steps

1. Cut the chicken breast into required size, massage with the marinade by hand and marinate in the refrigerator for more than 6 hours.

2. Put the marinated chicken into another container and coat it evenly with sweet potato flour. Remember to pinch it tightly with your hands and press down hard with both hands to prevent the sweet potato flour from separating from the meat during frying.

3. Pour about 1/3 of the oil into the fryer and heat the oil to 160 to 170 degrees.

4. When the sweet potato flour on the chicken legs is slightly moist, throw them into the pan and fry for five minutes (if you throw them into the pan after they are slightly moist, the flour will not fall off).

5. Before serving, if you like basil, you can throw the basil leaves into the pot (be careful of the oil spraying out of the pot because the leaves contain water). This ingredient is very popular in Taiwan. If you cannot purchase it in mainland China, you don’t have to use it.

6. After removing from heat, drain the oil and sprinkle seasoning powder evenly.
