How to make Sichuan-style chicken

7. Stir the chili powder with hot oil and set aside

8. Take the stewed chicken out of the pot and immediately soak it in cold water with ice cubes for at least fifteen minutes. (The hot and cold make the chicken skin shrink instantly, becoming smooth, crispy and tender)

9. Put minced ginger, chopped green onion, minced garlic, sugar, sesame paste, balsamic vinegar, light soy sauce, fried white sesame seeds and crushed peanuts into a small bowl, mix well, then add the chili oil from step 7 and mix well. Remove the chicken from the ice water, cut into pieces, and pour the prepared sauce over it.
