3. Wash the shiitake mushrooms and blanch them in a pot.

4. Add oil to the wok, heat up the oil and sauté onion, ginger, garlic and dried red pepper over low heat, then add the blanched ribs and stir-fry.

5. After the surface of the ribs is fried until slightly yellow, add light soy sauce, cooking wine, balsamic vinegar and dark soy sauce into the pot and continue to stir-fry evenly.

6. Then add hot water into the pot until it covers the spareribs, and add rock sugar, tangerine peel, star anise, cinnamon, and bay leaves. Bring to a boil over high heat and then turn to low heat. After half an hour, add the shiitake mushrooms, a little dark soy sauce and 3 spoons of sugar, and continue to simmer until the soup becomes thick.

7. After about 40 minutes, when the ribs are stewed, you can remove from the heat. Add a little balsamic vinegar before serving. The aroma of the ribs and the sweet and sour taste will be released immediately. It is very delicious!
