3. Wash the shrimps, drain the water and place them on a plate.

4. Put salt, pepper, Shaoxing wine, dry starch and egg white on the shrimps.

6. Wash the cucumber and cut it in half

7. Remove the cucumber seeds that tend to release water in the middle

8. Chop the green onion and ginger, and cut the cucumber into the shape of hunchback shrimps.

10.2 Salt, pepper, cooking wine, water starch, and chopped green onions are mixed into a bowl of starch in advance.

11. When the oil temperature reaches 30%, add the shrimp paste and stir quickly.

12. When the color turns red, take it out quickly and set aside

13. Take out the shrimp quickly and put it on a plate to ensure that the shrimp is crispy.

14. Leave a little oil in the pan

15. Add oil to the pan, stir-fry chopped green onion, ginger and diced cucumber

16. Stir-fry briefly and add the minced shrimp

17. Quickly pour the starch into the bowl and stir fry

18. Stir-fry until the sauce thickens and serve
