How to make braised pork and potatoes

What do you do when you are unhappy? Maybe you will choose to cry or laugh, or go out and have fun, or smoke or drink, etc., but I believe there are definitely people who are willing to choose "eating". When you are unhappy, you might as well make something delicious for yourself, maybe your mood will improve immediately. Well, let me first introduce the method of braised pork and potatoes.

1. Prepare the raw materials and cut the pork belly into pieces about two centimeters thick (I cut it in advance).

2.121 Cut the green onion diagonally into segments about 1 cm thick and slice the ginger.

3.212 Two potatoes (I forgot to take a picture of the raw materials before, so I just took a picture of them separately).

4. Wash and peel the potatoes, cut into cubes about two centimeters in size, wash with cold water, drain and set aside.

5. Pour enough water into the pot, put in the pork belly and blanch it for two minutes after the pot boils.

6.1 Pour a small spoonful of vegetable oil into the wok, pour the meat into it and stir-fry to remove some of the fat, so that it will not be too greasy when stewing.

7.2 Take out the blanched meat and drain the water for later use.

8. Pour two spoons of vegetable oil into another pot, add the white sugar and stir constantly on low heat until the sugar dissolves and small bubbles appear, which turn brown. (This is the key to braised pork. It’s fine if there are lots of small bubbles. Don’t cook it for too long, otherwise the meat will turn black and bitter).

9. Add the drained meat, green onion and ginger and stir-fry.

10. After the meat is colored, add cooking wine and continue stir-frying for a few more times.

11. Pour hot water into the pot to cover the meat by one finger joint, add two spoons of dark soy sauce and a small spoon of salt.

12. Pour the meat cubes and soup in the wok into the pressure cooker, add bay leaves, cinnamon and star anise.

13. Pour in the rock sugar. The color of the stew will be very beautiful after adding rock sugar. Cover the pot and cook on high pressure for 30 minutes.

14. After stewing in a pressure cooker for thirty minutes, pour the cooked meat and soup into the casserole, pour in the potato cubes, add two spoons of salt and cook over high heat for 20 minutes. Let the juice dry and the potato cubes will be stewed very soft.

The steps of braised pork and potatoes are simple, but to do it well, you still need to try and practice seriously. Although the method is important, understanding is more important. Only by truly understanding can you make delicious food.
